Camillo's Story

I was born and raised in the small Italian village of Miranda (between Naples and Rome). As a young boy I fell in love watching and tasting my grandmother’s cooking. Early on I knew my grandmother’s combination of Roman and Neopolitan cooking style was unique and wholesome. The taste of her fresh, pure ingredients combined with the right colorful presentation inspired me to become a chef. I later studied at the Roccaraso Italian Cooking School as a chef and trained in Italy as a sommelier.

Chef Tortola trained with critically acclaimed Italian Chef, Enzo Ripa, of O-Sole-Mio in Glascow, city center, Scotland. He has been the Owner/Chef/Sommelier of Camillo’s Ristorante Italiano in Helensburgh, Scotland and the Owner/Chef of La Bella Italia in Edinburgh, Scotland. He looks forward, with great pleasure in creating an epicurean culinary experience for you here in Princeton at “Camillo’s Café.” Enjoy our seasonal outdoor patio dining.

We buy our ingredients fresh from the market daily and aim to create specials every day that inspire and elevate food as an art form. Private Party in your home
Camillo is available on Sundays 11 am - 4 pm for a Private Party in your home. Parties large and small. Camillo will cook in your home kitchen and bring a staff to serve your guests. As a sommelier, Chef Tortola will advise as to which wine selections best complement the meal. Camillo is happy to work with you to select a menu which most pleases you and your partys' needs. He is happy to have your guests watch him cook while they catch a glimpse of his cooking techniques. In addition, guests can speak in Italian, perhaps "brushing up" on their conversational Italian with Camillo. An Evening of Wine and Food!
Join us in celebrating Camillo's Café – Our newest restaurant outlet in the Princeton area. On Wednesday July 30, 2008, at 7:00 PM, chef and owner Camillo Tortola will serve Italian-inspired specialties accompanied by wine samples from Hopewell Valley Vineyards. Tickets: $60.00 per person or $100.00 per couple. Tickets can be purchased at Camillo's Café, Princeton Shopping Center, or at Hopewell Valley Vineyards in Pennington. In the summer, we buy our vegetables from two local organic gardens: The Riverside Elementary School Gardens and the Watershed Organic Farm in Pennington.
